Whisk eggs in a shallow bowl. In another shallow bowl, mix breadcrumbs, parsley, Parmesan, paprika and salt. Stir in melted butter to coat crumbs. Dredge fish fingers in flour, shaking off excess. Dip in eggs and then coat in breadcrumb mixture. Set fish sticks on parchment paper-lined baking sheet.
Bake 13 to 15 min. in preheated 425°F (220°C) oven, or until fish is just cooked through.
Serve with lemon wedges and tartar sauce, if using.
