Preheat the oven to 325 degrees F. Line a large, sided baking sheet with parchment paper. Combine all the ingredients in a bowl and toss to thoroughly coat the pistachios. Spread the pistachios in a single layer on the baking sheet. Bake for 25 to 30 minutes, or until the shells of the pistachios are golden and the nuts are heavenly aromatic.

Recipe Options: Make Cajun-spiced pistachios by simply replacing the curry powder with Cajun spice. Cajun spice is sold in bags and/or bottles and can be found in the bottled spice aisle, bulk food section, or the produce department.
