Line a baking sheet with plastic wrap. Spread the coconut on a plate. Place the remaining ingredients in a food processor and blend until paste-like.
Lightly dampen your hands with cold water. Roll a heaping tablespoon of the date mixture into a ball and set on the baking sheet. Repeat with remaining date mixture.
Roll and coat each ball in coconut, pressing it on to help it adhere, and then set back on the baking sheet.
Refrigerate the balls until firmed up, and then transfer and set in a single layer in a tight-sealing container. Keep refrigerated until ready to enjoy. Date and chai energy balls will keep up to a month.
Note: Chia seeds are available in our Vitamins & More Department. Before using the almond butter, be sure it is well blended.
