Method

Place the dates in 2-cup glass measuring cup or 500 ml mason jar. Pour in enough boiling water to reach the top of the cup or jar, completing submerging the dates. Let the dates soften in the water 90 minutes.

Set a sieve over a bowl and drain the dates into it. Set the dates in a food processor with 1/2 cup of the soaking water. Pulse until the dates are blended into a smooth paste, scraping the sides of the food processor as needed during the process.

Transfer the date paste to tight-sealing container and refrigerate until needed. Date paste will keep two weeks.
