Place rice in a pot with 2 1/2 cups of cold water. Bring to a boil, then reduce heat to its lowest setting. Cover and cook until tender, about 20 minutes. When the rice is almost done, heat the oil in a wok or large skillet over medium-high heat. Add pork and stir-fry until cooked through. Add onions, garlic and red pepper and stir-fry 2-3 minutes more. Add soy sauce, cooked rice and shrimp and heat through. Add remaining ingredients, reserving a few green onions to sprinkle on top, and cook a few minutes more. Spoon rice on to a platter, sprinkle with the reserved green onions, and serve.
