Preheat the oven to 350 degrees F. Heat the oil in very large skillet over medium-high. Season the chicken with salt, pepper and paprika; brown on both sides and then set in large casserole. Drain most of the fat from the skillet and then add the onion, garlic and ginger and cook 2 to 3 minutes. Mix in the curry powder and cook 1 minute more. Mix in the remaining ingredients and bring to a simmer. Pour over the chicken; cover and cook in the oven 50 to 60 minutes, or until the chicken is tender. Serve with steamed basmati rice, chutney, naan or pappadums and any other Indian-style condiment you feel will work with this dish.
