Preheat your indoor grill or barbecue to medium, medium-high. Melt the butter in a skillet set over medium heat. Add the apples and celery and cook 3 minutes. Add the sauerkraut and apple juice, bring to a simmer, and simmer 5 minutes.
While the sauerkraut simmers, grill wieners until nicely coloured and heated through. When simmered 5 minutes, stir the green onion and pepper into the sauerkraut. Nestle the wieners into the sauerkraut and garnish with a few fresh sage sprigs, if desired. Set skillet on the table, and serve the wieners and sauerkraut from the skillet.
