Method

  1. In a bowl, combine beef, bread crumbs, egg, garlic, mint, oregano, cumin, salt and pepper. Divide meat mixture into four equal balls. Moisten your hands slightly with cold water, and then shape each ball into a 5” long, 3 1/2” wide patty.
  2. Set a piece of feta cheese down the centre of each patty, gently pressing them into the meat. Pull the edges of the patty up and over the cheese, pressing the meat together and ensuring the cheese is completely encased.
  3. Heat your barbecue or indoor grill to medium-high. Lightly oil the bars of the grill. Grill patties 4 to 5 minutes per side, or until cooked through and the centre of the meat reaches a food-safe 160˚F (71˚C) when checked with an instant-read thermometer.
  4. Serve with the pita bread and tzatziki, and garnish as desired with cucumbers, fresh mint sprigs, cherry tomatoes, olives and onion.

Recipe Options: Instead of beef, use ground lamb to make the patties. Instead of feta, try stuffing the burgers with soft goat cheese.
