Brush steaks with a little olive oil. Rub with salt,
pepper and rosemary.
Grill, broil or pan-fry steaks to desired doneness over medium-high to high heat. (Allow 2 to 3 minutes per side for rare, 3 to 4 for medium rare, and 4 to 5 for medium). Before serving, drizzle with a little olive oil and sprinkle with lemon zest and a touch more salt and pepper.
