Place the first 7 ingredients in small bowl and whisk until the sugar is dissolved. Place the cucumber in a 4 cup capacity jar. Pour the vinegar mixture over them. Push down on the cucumber slices until all are submerged in the liquid. Seal the jar and let the cucumbers marinate in the fridge overnight, after which they will be ready to serve. They will also keep in the fridge for 2 to 3 weeks.

Note: Baby seedless cucumbers are sold in bags in the produce department. About 6 to 7 will yield the 3 cups of sliced cucumbers required for this recipe.
