Make dip by combining all ingredients in a small bowl. Cover and refrigerate until needed. Preheat your deep-fryer to 350 degrees F. Preheat the oven 200 degrees F. Set a wire rack over a baking sheet.
Place the egg in a medium bowl and beat until the white and yolk is well blended. Mix in the buttermilk. In a second bowl, place the flour, baking powder, salt, cayenne and paprika and whisk to combine. Mix in the corn and green onion until well coated with the flour mixture. Now mix the flour mixture into the egg/buttermilk mixture, creating a very thick batter.
Working in batches, carefully drop heaping tablespoon amounts of the batter into the oil.
Deep-fry them until golden, about 3 to 4 minutes. Set the fritters on the wire rack; keep warm in the oven until the rest are deep-fried. Arrange the fritters on a platter with the dip alongside.

Note: Two cobs of corn should yield the amount required for this recipe. Use a sharp paring knife to cut them off the cob.

Serving Suggestions
