Method

  1. Cook rice as per package directions. Spread hot rice on a wide plate and cool to room temperature. 
  2. While the rice cools, bring a large pot of water to a boil. Add the frozen edamame, return to a boil and cook 4 minutes. Drain well, cool edamame with ice-cold water, and then drain well again.
  3. Now shell the edamame, by squeezing on each pod and pushing out the beans. Set the beans in a large salad bowl; discard the pods.
  4. Add the cooled rice and all remaining ingredients to the salad bowl and toss to combine. Cover and refrigerate salad until ready to serve.
