  1. Preheat the oven to 375˚F. Line a baking sheet with parchment paper. Combine the first 4 ingredients in a shallow-sided plate, and then set aside.
  2. Carefully loosen and lift the skin up on each piece of chicken. Divide and slide the garlic slices underneath the skin. Now put the chicken skin back into its original position.
  3. Brush the top of each piece of chicken with mustard. Coat the mustard side with the Parmesan mixture, gently patting it on. Place the chicken crust-side up on the baking sheet. Bake
    45 to 50 minutes, or until cooked through.

Recipe Options: If you're not fond of Dijon mustard, light mayonnaise could be used instead to make the Parmesan mixture adhere to the chicken. Other herbs, such as rosemary or oregano, could be used instead of sage.
