- Preheat your barbecue or indoor grill to medium-high. Cut each nectarine in half and remove the stones. Now cut each half into 4 wedges. Toss the nectarines wedges with the 2 tsp. oil.
- Grill the wedges about 30 to 60 seconds per side then set on a plate. Leave your grill on.
- Cut each piece of bread lengthwise in half. Grill cut sides of bread about 30 to 60 seconds, then set on a work surface.
- Spread pesto on each cut side of bread. Now divide and spread the bottom pieces of bread with goat cheese. Sprinkle some pepper over the cheese. Divide and top the goat cheese with salad greens, prosciutto and nectarines. Drizzle all with a little balsamic crema and, if desired, some extra virgin olive oil. Set on the top bread pieces and serve.
Note: Packages of sliced prosciutto are available in our Deli Department. Balsamic crema (or cream) is reduced balsamic vinegar. Look for it in our Deli Department or vinegar aisle.
Recipe options: Instead of nectarines, try another type of grilled fresh fruit in these sandwiches like wedges of pear or plum. Instead of salad greens, use arugula or baby spinach.
