Preheat oven to 375 degrees F. Combine dry ingredients in bowl. Combine wet ingredients in another. Add dry ingredients to wet and mix until just smooth.(Do not over mix or muffins will be tough). Spoon into a muffin cupped-lined, or vegetable sprayed, muffin tin, filling each slot slightly over the top. If desired, before baking, decorate tops of with a sprinkle of granola. Bake 20 minutes, or until a toothpick inserted in the middle of the muffin pulls out clean.
Note: Granola comes in a range of varieties. Choose the one that appeals most.
Recipe Options: The dried apricots could be replaced with other dried fruits such as cranberries or chopped dates.
