Method

Place the juice and sugar in a small pot and bring to boil. Cook until the sugar just dissolves, about 2 minutes. Cool to room temperature, then place in the fridge and chill well. Freeze the grapefruit mixture in an ice cream maker according to manufacturer’s directions. Spoon into small glasses, garnish with a grapefruit segment and mint sprig, and serve.
