Method

Preheat the oven 350 degrees F. Heat the olive oil in large non-stick skillet. Season the lamb on both sides with salt and pepper. Brown the chops on both sides, about 1 minute per side. Remove and set chops in a 9 by 13-inch casserole. Combine remaining ingredients in a bowl, and then pour over the lamb. Cover and bake 75-90 minutes, or until lamb is very tender. Divide among plates and spoon over pan juices.

Serving Suggestions

Boiled new potatoes sprinkle with extra virgin olive oil, chopped fresh mint and chives, and Greek salad, go nice with the lamb.
