Combine the first 7 ingredients in a small bowl. Arrange the beans on a platter. Drizzle with the tahini dressing. Garnish with twirls of lemon zest and serve.
Note: To blanch the beans, plunge into boiling water for 2 minutes. Drain well, cool in cold water, and then drain well again.
Recipe Options: For a sweeter tasting dressing, add honey to taste. If you like a spicy taste, add a pinch of cayenne pepper or crushed chili flakes to the dressing. Instead of mint, flavour the dressing with another type of fresh herb, such as basil or oregano. Try drizzling the tahini dressing on other blanched vegetables, like wax beans or asparagus.
