Heat your barbecue to medium-high. Season the chicken with salt and pepper. Lightly oil the grill. Grill the chicken 2 to 3 minutes per side, or until the exterior is nicely coloured. Move the chicken to one side of the barbecue and set skin side up. Turn the heat off on that side of the barbecue; leave the other side at medium-high. Close the lid and cook the thighs 25 to 30 minutes, or until cooked through.
While this occurs, place the remaining ingredients in a small pot. Bring to simmer, simmer 3 to 4 minutes, and then cover and reserve on low heat. When cooked, plate the chicken, top with sauce and serve.
Recipe Options: Instead of chicken thighs, grill four boneless, skinless breasts and top them with the honey coriander sauce. For added colour and taste, sprinkle the chicken with some chopped fresh mint or cilantro, or sliced green onion, just before serving.
