Place the 2 Tbsp. olive oil, garlic and chopped mint in a sided dish. Add the lamb and turn to coat.
Preheat your grill to medium-high. Season the lamb with salt and pepper. Grill the lamb 3-4 minutes per side, or until desired doneness is achieved.
While the lamb cooks, spread and make a 4” or so circle of homous on each of two plates. Place the salad greens in a bowl and toss with 2 tsp. oil, lemon juice, salt and pepper. Now divide and mound salad greens on top of the homous on each plate.
When cooked, set 2 lamb chops on the greens on each plate. Garnish with cherry tomatoes and mint sprigs, and serve.
Note: Holy Homous is available in our Deli Department. If desired, you could also serve it warm by zapping it in the microwave 30 seconds or so.
