Method

Combine the first 10 ingredients in a large shallow dish. Add the pork and turn to coat. Cover and marinate in the fridge overnight, turning occasionally. Preheat your barbecue to medium-high. Remove the pork from the marinade and season with salt. Lightly oil the grill and cook the pork 3 to 4 minutes per side, or until cooked through.

Recipe Options: For a darker, more intensely flavoured marinade, use red instead of white wine. If you like things spicy, mix 1/4 tsp. to 1/2 tsp. of crushed chili flakes into the marinade before adding the pork.
