Preheat oven to 375 degrees F. Line a baking sheet with parchment paper. Combine the breadcrumbs, cheese, herbs, salt and pepper in a shallow bowl or pie plate. Place the mustard in a second bowl large enough to hold the chicken. Add the chicken and toss to coat with the mustard.
Coat a piece chicken in the breadcrumb mixture, gently pressing it on to help it adhere, and then set on the baking sheet. Repeat with remaining pieces of chicken. Bake the chicken for 40 to 45 minutes, or until cooked through.
