Method

  1. Fry bacon until crispy, drain on paper towel, transfer to baking sheet so they sit flat, and then set aside.
  2. Combine milk, eggs and vanilla in a large bowl. Combine flour, sugar, baking powder and salt in a second bowl. Mix dry and wet ingredients together until just combined.
  3. Preheat oven to 200˚F. Preheat a non-stick griddle to medium, medium-high heat. Lightly coat the surface with vegetable oil spray.
  4. Working in batches, pour 1/3 cup amounts of batter into oblong shapes slightly longer than a cooked bacon strip, leaving a 2" space between each pancake. When pancakes become speckled with bubbles on top, about 2 to 3 minutes, set a strip of bacon on top of each pancake, and then flip.
  5. Continue cooking on the other side until the centre of the pancake springs back when touched, about 1 to 2 minutes. Keep cooked pancakes warm in the oven until all are done. Serve pancakes with maple syrup.
