Preheat the oven to 425 degrees F. Place the fish in a single layer in a parchment paper-lined baking dish. Spread the hoisin sauce on top of the fish; sprinkle with the coconut. Bake for 10 minutes, and then turn the oven to broil. Broil the fish 1 to 2 minutes, or until nicely glazed and cooked through. Serve each fish fillet with a lime wedge for squeezing on top.
