Preheat the oven to 350 degrees F. Whisk together eggs, milk, cream, nutmeg, thyme, salt and pepper in a bowl, and then set aside. Arrange half the ham, cheeses, red bell pepper and green onions in the bottom of the pie shell. Pour in egg mixture. Arrange remaining ingredients on top. Bake 40-45 minutes, or until eggs are set. Rest the quiche 10 minutes before cutting to allow filling to set.
