Preheat oven to 375 degrees F.
Spray and grease a 9-inch spring-form cake pan with vegetable oil spray.
Place the eggs, milk, honey, butter, vanilla and orange zest in a medium bowl and whisk to combine. Place the cornmeal, flour, baking powder, cinnamon, nutmeg and salt in a second bowl and whisk to combine. Add the dry ingredients to the wet and mix until just combined. Spoon the batter into the cake pan.

Bake the cake for 22-24 minutes, or until the cake springs back when gently touched in the very centre.

Instead of the whipped cream and fruit that the recipe suggests you serve alongside wedges of this cake, trying topping it with a scoop of vanilla, chocolate or hazelnut gelato.
