Preheat the oven to 325 degrees F. Arrange the ribs, meaty-side up, in a single layer in a roasting pan. Season with salt and pepper. Pour in the 1 1/2 cups apple juice. Cover and bake for 90 minutes. While the ribs bake, place the honey, soy sauce, vinegar, 1/3 cup apple juice, cornstarch, garlic and ginger in small pot and whisk to combine. Bring the mixture to a simmer and then remove from the heat. When the ribs have cooked 90 minutes, uncover and brush with the honey mixture. Bake the ribs, uncovered 15 minutes more, or until nicely glazed.
