Place all ingredients, except shrimp and onion, in a medium pot. Use an immersion blender to purée the mixture (or pour it into a food processor or blender and then add it back to the pot). Gently simmer the soup 5 minutes. Pour into bowls, top with shrimp and green onion, and serve.

Serving Suggestions

Serve the soup with something for dunking, such as tortilla chips, pappadums, or wedges of grilled naan bread. Naan bread is available in the deli department. Pappadums are sold in the Asian foods aisle and instructions on how to prepare these wafer-thin breads are included on the box.
