Preheat the oven to 400 degrees F. Place the half baguette slices on a parchment paper-lined baking sheet. Cover the top of each baguette slice with thin slices of the cheese. Place a teaspoon of cranberry sauce in the centre of each canapé. Bake for 6 to 8 minutes, or until the cheese is melted. Cool a few minutes, and then arrange on a platter. Garnish each canapé with a mint sprig and serve.
