Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Spread one side of each bread slice with pesto and set, pesto-side up, on the baking sheet. Top each bread slice with 2 slices of tomato, and 2 slices of the cheese. Bake for 8 to 10 minutes, or until the cheese starts to melt and the bottom of the bread is lightly toasted. Divide the bruschetta among plates. Drizzle with the olive oil, season with salt and pepper and serve.
Note: Prepared pesto can be purchased in jars and tubs at Thrifty Foods. Balls of bocconcini cheese can be purchased in the deli. One 180 gram tub is sufficient for this recipe.
