Method

  1. Preheat the oven to 350˚F. Line a large baking sheet with parchment. Spread one side of each tortilla with 1/3 of the refried beans, and then spread each tortilla with 1/3 cup of the salsa. Now top and sprinkle each tortilla with 1/2 cup cheese.
  2. Roll each tortilla into a cylinder. Cut the rolled tortillas into 1-inch thick pieces and set, cut side up, on the baking sheet. Bake 8 to 10 minutes, or until just heated through. Cool slightly before serving with salsa and sour cream for dipping.

Recipe Options: Add a bit of thinly sliced cooked chicken, pork, beef or turkey to the pinwheels before rolling. Make the pinwheels spicier by sprinkling on some finely chopped fresh or jalapeno peppers before rolling. Use cheddar cheese instead of Monterrey jack. Use store-bought or homemade salsa, such as this one found in our website recipe collection: Homegrown Tomato Salsa.

Serving Suggestions

Having a casual party, maybe to celebrate a sporting event? Then make these pinwheels part of an appetizer buffet and serve them with some of the other more casual appetizers found in our website recipe collection, such as Beef and Brie Melts, Honey Barbecue Chicken Wings, Crab Quesadillas and Cheddar Pecan Log.
