  1. Preheat the oven to 350˚F. Line a large baking sheet with parchment. Spread one side of each tortilla with 1/3 of the refried beans, and then spread each tortilla with 1/3 cup of the salsa. Now top and sprinkle each tortilla with 1/2 cup cheese. 
  2. Roll each tortilla into a cylinder. Cut the rolled tortillas into 1-inch thick pieces and set, cut side up, on the baking sheet. Bake 8 to 10 minutes, or until just heated through. Cool slightly before serving with salsa and sour cream for dipping.

Recipe Options: Add a bit of thinly sliced cooked chicken, pork, beef or turkey to the pinwheels before rolling. Make the pinwheels spicier by sprinkling on some finely chopped fresh or jalapeno peppers before rolling. Use cheddar cheese instead of Monterrey jack.
