Pour 1 1/2 cups of the coffee into an ice cube tray and freeze solid. Place the remaining 2 cups of coffee, milk, vanilla and spices in a jug and whisk well to combine. Sweeten, if desired, with honey to taste. Set the jug in the refrigerator until the mixture is super-chilled. Unmould and divide coffee ice cubes among 4 glasses. Whisk the coffee mixture again and divide and pour into the glasses. Garnish each drink with a cinnamon stick and serve.
