Method

  1. Preheat the oven to 350˚F. Set 4, 3/4-cup baking cups or ramekins in a baking pan.
  2. Place berries, extract, syrup, 1/2 cup coconut milk and almonds in a medium bowl and very, very gently toss to combine. Divide and spoon the filling into the cups. Then divide the fruit into cups and top with the crumbled bites.
  3. Bake the crisps 25 minutes, or until golden brown and filling is hot. Serve warm or at room temperature. Top each crisp, if desired, with a drizzle of coconut milk and a mint sprig.
