Method

Preheat the oven to 325 degrees F. Layer the meat and vegetables in a deep oven-proof pot or casserole; sprinkle each layer with half the parsley and salt and pepper. Pour in the stock. Cover tightly and cook in the oven 1-1/2 to 2 hours, or until the lamb is very tender. Divide the meat, vegetables and broth among bowls, sprinkle with remaining parsley and serve.
