Method

  1. Place oven rack in the middle position. Preheat oven to 450°F. 
  2. Slice yam, sweet potato and jicama lengthwise into 1/4" to 1/2" thick slices. Now cut each slice into 1/4" to 1/2" wide strips and place them in a large bowl. Add oil, paprika, garlic powder salt and pepper and toss to coat. 
  3. Arrange vegetables in a single layer on a large, good-quality, non-stick baking sheet. Roast vegetables in the oven for 40 to 45 minutes, or until richly coloured and slightly crispy. 
  4. Serve oven fries from the baking sheet or arrange on a platter, sprinkled with the cheese and parsley (or cilantro).
