Preheat the oven to 425 degrees F. Combine sugar, tapioca and spices in a bowl. Add kiwi fruit slices and lemon juice and gently toss to combine. Let stand 15 minutes. Spoon the filling into bottom pie crust, gently packing it in. Dot the top with butter. Brush the edges of the bottom crust with egg wash. Place the top crust on, crimping the edges to seal. Brush the top of pie with egg wash. Cut a small hole in the centre of the pie to allow steam to escape. Bake for 20 minutes. Reduce the heat to 325ÎF and cook for 30 minutes more, until golden brown and the filling is bubbling in the centre.

Note: Minit (quick cooking) tapioca can be found in the aisle puddings are sold.

Serving Suggestions

A spoon or scoop of whipped cream, ice cream and frozen yogurt, and, or, a sprinkle of fresh berries, such as blueberries, raspberries and blackberries, would nicely compliment this pie.
