Method

Preheat oven to 425 degrees F. Brush a baking dish with a little of the butter. Loose roll up sole fillets and place inside. Drizzle with remaining butter and the lemon juice. Combine bread crumbs, zest, basil, paprika, salt and pepper in a bowl. Sprinkle over sole. Bake 12-15 minutes; then broil 2-3 minutes to brown the top. Divide sole among plates, drizzle any pan juices over top, and serve. Garnish with lemon slices and fresh basil sprigs, if desired.

Serving Suggestions

Serve this delicate fish dish with steamed rice or boiled new potatoes, and asparagus, steamed and drizzled with extra virgin olive oil.
