Preheat oven to 400 degrees F. Cut potatoes in half lengthwise, and then cut each half into 4-6 wedges and place in a bowl. Toss in oil, salt, pepper and grated lemon zest. Place potatoes in a single layer on a baking tray and bake 30-40 minutes, turning once halfway through cooking to ensure even browning. Arrange the potatoes in a serving dish. Drizzle with lemon juice, sprinkle with herbs, and serve.
