  1. Place garbanzo beans in a bowl and cover with 4 cups cold water. Soak beans 12 hours, or overnight.
  2. Drain beans through a sieve, rinse well, and then place in a tall pot. Pour in 12 cups of fresh cold water. Bring beans to a boil over high heat, and then reduce temperature until water is just simmering. Simmer beans until tender, about 45 minutes.
  3. While the beans cook, place lentils in a small pot and cover with 2 cups cold water. Bring to a boil over high heat, and then reduce the temperature until the water is just simmering. Cook lentils until tender, about 10 minutes.
  4. Drain the cooked beans and lentils well, cool to room temperature, and then place in a food processor. Add the tahini, egg, garlic, cumin, salt and cayenne. Pulse until almost paste-like, but still a little bit coarse in texture. Transfer the mixture to a bowl and mix in the green onion, 1/3 cup grated carrot, zucchini, mint (or oregano) and lemon zest.
  5. Place the panko (or cornmeal) in a shallow dish. Line a baking sheet with parchment paper. Lightly moisten your hands with cold water. Form one-quarter of the beans/lentil mixture into a 3/4" thick patty and then coat with panko, pressing it on to help it adhere. Set the coated patty on the baking sheet. Make 3 more patties in similar fashion. Cover and refrigerate the patties for at least 20 minutes to firm them up.
  6. Heat the oil in a large non-stick skillet set over medium heat. Add patties and cook 3 to 4 minutes per side, or until golden and heated through.
  7. To serve, set a lettuce leaf on each of 4 plates. Set a patty on each leaf and let diners top as desired.
