Method

Heat the oil in a soup pot set over medium heat. Add the onion, celery and carrot and cook 4 to 5 minutes. Add the remaining ingredients and bring to a simmer. Simmer 10 to 15 minutes, or until the potatoes are tender. Adjust the seasoning and serve.
