Preheat the oven to 350 degrees F. Grease a 9” x 5” loaf pan with vegetable oil spray. Cut a piece of parchment paper to fit the bottom of the pan and set it in place. Place the flour, baking powder, baking soda, salt and cinnamon in a bowl and whisk to combine. Mix in the ginger and walnuts. Place the maple syrup, milk, orange juice, butter and vanilla in a second bowl and mix to combine. Stir the wet ingredients into the dry until just combined. Spoon the batter into the pan. Bake for 40 to 45 minutes, or until the loaf springs back when gently touched in the centre.
