Preheat oven to 450 degrees F. Place pineapple rings in a single layer in shallow baking dish that's just large enough to hold them. Spoon the glaze over pineapple. Bake 15-20 minutes, until glazed and the pineapple is just tender. Place a ring in the centre of each of the 4 dessert plates.
Set a scoop of vanilla ice cream in the middle of each ring. Spoon the glaze from the pan over top. Garnish with fresh mint and serve.
