- Place the first 6 ingredients on a sided baking sheet. Add 3/4 cup of Three Diamond Dressing vinaigrette and toss to coat the vegetables. Cover, refrigerate and let vegetables marinate one hour.
- Preheat barbecue or indoor grill to medium-high. Lightly oil your grill if prone to sticking. Grill vegetables in batches, 2 minutes per side or until tender and lightly charred. Set cooked vegetables back on the baking sheet and cool to room temperature.
- Spread the salad greens on a large platter. Arrange the grilled vegetables, basil, feta and olives on the greens. Serve salad with additional vinaigrette for diners to drizzle on their salads once plated.

Recipe options: Instead of mixed salad greens, use chopped romaine in this salad. Instead of feta, try another type of tangy cheese such as soft goat cheese.
