Method

Boil the sweet potatoes in a generous amount of water until very tender. Drain well and thoroughly mash. Whip in the buttermilk and butter. Mix in the maple syrup, nutmeg, clove, salt and pepper. Transfer to a serving bowl, drizzle top with a little maple syrup, if desired. Sprinkle with a little chopped chives or parsley and serve.

Serving Suggestions

A spoon of this sweet and savoury side dish would nestle nicely beside slices of roast turkey, baked ham, crown roast of pork or roast duck.
