Method

Place the yams and ginger in a pot, cover with cold water and boil until the yams are tender. Drain well and then thoroughly mash the yams. Beat in the butter and milk. Mix in the nutmeg, cranberries, salt and pepper; spoon into a serving dish. Sprinkle with parsley, if desired, and serve.
