Place the goat cheese in a bowl and beat until lightened and smooth. Mix in the remaining ingredients, except the herbs. Dampen your hands with cold water and divide the goat cheese mixture in half. Shape each half into a log that is 6" long and 2" wide. Place the herbs on a wide plate. Roll each log in the herbs to coat. Wrap each in plastic wrap and chill in the fridge for about 2 hours to firm up. To serve, place a log on a serving tray and surround with crackers or sliced bread.
