Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper. Combine all the ingredients, except cheese, in a bowl. Divide the mixture into 4 balls. Flatten each ball into an oval patty. Make a row of crumbled blue cheese down the centre of each patty. Shape each patty into a mini meatloaf; ensuring the cheese is completely encased by the meat. Roast for 30 minutes, or until entirely cooked through and the centre of each meatloaf registers 160 degrees F on a meat thermometer.
