Place the fruit in a heatproof bowl. Place the sugar, water and ginger in small pot. Stir over medium heat until sugar is dissolved and mixture just to boils. Remove from heat and pour over the fruit. Add the chopped mint and gently mix. Cool to room temperature, then thoroughly chill before spooning into glasses and serving.

Serving Suggestions

This is wonderful blend of fruit is great to serve for breakfast or brunch. It also makes a nice dessert spooned into a small meringue shells filled whipped cream, or served over vanilla ice cream or frozen yogurt
