Halve the pear lengthwise and remove the core with a small spoon. Cut the pear into thin lengthwise slices and place in a medium bowl. Add the lemon juice and toss to combine.
To make the salad dressing, place the oil, orange juice, mustard, salt and pepper in a second medium bowl and whisk well to combine.
Divide and arrange the pear slices in a fan-like shape on each of 2 plates. Add the salad greens to the dressing and toss to coat. Divide and mound the salad greens on top of the pears. Decorate the top of each salad with nuggets of the cheese, cranberries and pecans.
