Combine the first four ingredients in a bowl. Combine the rest, except oil or cooking spray, in another bowl. Mix the dry ingredients into the wet until just combined. Let the batter rest 5 minutes, (it will become quite bubbly), and then give it a few stirs before cooking. Preheat your non-stick griddle or large skillet over medium to medium-high heat. Coat the cooking surface lightly with the oil or cooking spray. Pour 4 to 5–inch rounds of batter into the pan, leaving a couple of inches between each pancake. Flip the pancakes when the top becomes speckled with bubbles. Continue cooking until the underside is browned and the centre of the pancake springs back when touched. Keep cooked pancakes warm in a 200 degrees F oven until all are done.

Serving Suggestions

Serve these pancakes in a traditional way with butter and maple syrup. Or, dress them up with slices of peeled orange and a sprinkle of toasted coconut; drizzle the pancakes with maple syrup accented with a splash of orange liqueur.
